We have run a red oak fire on the corner of 4th and Sycamore since 2017. The meal prep comes out of the same kitchen, on the same fire, one cook a week — and every meal lands inside a band we print on the lid.
Most meal prep that reaches Orange County is cooked somewhere else, frozen or chilled hard, and trucked in. Ours is cooked on Monday morning eleven miles from wherever you live and handed to you on Tuesday. Nothing is ever frozen.
The part that matters more: we publish the numbers and hold to them. Every meal is 50–60 g of protein and 400–600 calories. Not an average across the menu, not a target — a band, on every single meal, weighed on a portion scale at the station and printed on the box. If you track what you eat, you can stop estimating. We are the only operation in Orange County that publishes a guaranteed band, and it is the one thing about this business we will not bend.
The rest is technique. Everything is built against the fifth day, not the first plate. Salsa ships in a sealed cup so it never sits on the protein. Nothing on the plate wilts — no lettuce, no slaw, no avocado. Cabbage and zucchini are salt-drained before roasting. The tri tip is pulled at medium rare because your microwave is going to cook it a second time.

Tuesdays, 8 AM to 2 PM. Order and pay by 6 PM Saturday — we buy against the exact count on Sunday, so the cutoff is real. We cook Monday morning and pack cold.
Nothing. Pickup is free, which over a year is worth about $130 against a service that charges delivery on every box. If you work downtown or drive Fourth Street, this is the cheapest way to buy it.

All our prices are before Santa Ana's 9.25% sales tax, which checkout adds. We are not the cheapest food in Orange County and we are not trying to be — there are marketplace cooks at $8 a plate. We are the cheapest one that guarantees what is in the box.
If you run a gym or coach clients in Santa Ana, Tustin, Orange, Garden Grove or Anaheim, we do a standing Tuesday drop. We bring a cooler at a set hour, your members who pre-ordered take their boxes, we leave. You host nothing, stock nothing and handle no money.
